In general, Celebrity is going to be somewhat "quieter" than either of the other two lines. Celebrity is a bit more upscale in terms of food and service and ambiance. However, any four-day cruise will tend to be more of a "party" cruise. Celebrity doesn't have as much of the "silly pool games" atmosphere as the other two lines do.
Go to CruiseCritic.com, click on "Boards" at the top of the page and go to the boards for the three cruise lines and browse a while. Or click on "Cruise Styles" or "Reviews" and read that info - the "Member Reviews" are particularly helpful.
Century was a beautiful ship before the "makeover", but I haven't been on her since then - when they took out the fantastic T-pool [boo!].
