Fine dinning server help in Chicago? Help?

Hi , everyone . I need some major advise and some major points of help. I have been a server for over 10 years in Chicago. I have worked from IHOP, Fridays, to seasonal jobs, upscale semi- fine dining and now hopefully fine dinning at a higher level in a very well known Chicago restaurant. I know the basics of service were you have to give great service which is pretty apparent. But now I need fine dining presentation tips. I know about wine pairing, serve with the right, clear with the left. What other tips should I know when it comes to this second interview next week. I wanna wow the manager in the interview. I need advise in how you greet the table, how would you up sell the table, and the basics of fine dinning. If there is anything else you believe I should know please inform me . Here are a few tips the would impress me as a customer.

1. Don't greet the table with "Hi guys" when not all the people at the table are guys.

Give a pleasant "good afternoon or good evening". The terms Gentlemen and Ladies works so does Sir and Ma'am.

2. Introduce yourself and speak in a clear voice. Enunciate clearly. You will find in an upscale restaurant some of the patrons are a bit older and since we spent many years at rock concerts our hearing is beginning to fail us.

3. Do ask how things are but give us a chance to try the food before you ask and don't wait until we have a mouth full of food to ask.

These are just a few things that would impress me.

Oh, by the way this should not have to be said but show up for the interview clean clothes, hair neat, nails clean and neat. If you have piercings remove them or tone them down. I don't have a problem with them but if they hinder your speech it can be annoying. (You may not even realize it so ask a real friend.) If you have any tattoos you may want to cover them if they are distracting or offensive in any way.

At the beginning of the evening always ask the chef if you can taste specials so that you can make good recommendations to customers. Over the course of time, eat and sample everything on the menu so that you really know the food. Check the plates against the tab before you serve them. Memorize the ingredients and preparations; people eating in fine restaurants always want information on what's in a dish and how it's prepared. When serving, inform the diners of what's on their plates and what went into it. I hate being served entrees in fine restaurants without an explanation of the dish. Don't be afraid to offer diners tips on what you like best on the menu when they ask. Learn how to time the serving of courses. Pacing is big in upscale places.
